There are so many different recipes for chai masala, it'd be hard to choose just one.

This Gujarati-style recipe is my favorite. It's also useful for more than just chai – I was making plum jam and threw some in while it was cooking down (about 1 teaspoon per pound of fruit) and it turned out great.
