Lexica says: I've never made risotto, in part because the "you must stir CONSTANTLY or it will be RUINED" seemed unappealing. According to Mark Bittman, that's not necessary. Hm.` as a risotto lover and aficionado I must humbly disagree.. sorry It's madness! I've seen a chef make it in the oven, with no stirring at all! Therefore, I just order risotto in restaurants and never make it at home. |
