as a risotto lover and aficionado I must humbly disagree.. I made risotto many many times and have tried almost every possible combination, stir, stir slowly, stir occasionally and so on. there ain't no escaping the constantly stirring, it will not be ruined if you don't but you will not get an excellent risotto either..

It's madness! I've seen a chef make it in the oven, with no stirring at all!

Therefore, I just order risotto in restaurants and never make it at home.
