									My sister makes the best grilled portobello mushrooms (you could do under a broiler too).

It's so easy and so tasty.  You  make a vinagrette out of balsamic vinegar, olive oil, shallots, thyme, salt and pepper.  Marinate the mushrooms for an
hour or so. 
</DIV>

Place mushrooms on the grill upside down (visualize the portobello  as a cup - and place it upside down).  Reserve marinade.  After a few minutes turn the
portobellos right side up and fill cup with reserved marinade and a slice of smoked gouda.  Grill until cheese is melted and bubbly.

The sweetness of the balsamic and the smokiness of the gouda make this dish taste just fabulous.  Serve it with something simple like grilled salmon or steak.

Edited to add: The big portobellos make a great side dish but you could use the little teeny ones as an appetizer.
