Mix the dry ingredients together well, add the oil and half the water and mix, slowly adding enough water to make a rough dough. Turn out and knead until it comes together. Divide the dough into 4. Mix the sprinkling ingredients together in a separate bowl.</DIV><BR />Roll out each ball of dough on parchment paper (I used a silicon baking sheet) until it is as thin as you can get it, cut into diamonds and prick well with a fork. Sprinkle the cinnamon/sugar mix over and lightly press into the biscuits. Bake for about 15 mins or until golden brown (on a few of my crackers the sugar had melted and caramelized) when cool snap apart.
