(My favourite soup:
1 Butternut, 1 onion, 1 orange (juice + rind), curry paste or powder, nutmeg, milk, chicken stock, sugar, salt & pepper. Cook, liquidize and serve with a dollop of cream.)

Also Mac & cheese with butternut.

Lexica, I just came across a recipe for Winter Panzanella that uses butternut squash. It seems really labor intensive, but sounds amazing.
