Gluten is concentrated wheat isn't it? I would say then that this means that the poisons in the wheat are what is causing the trouble. Pesticides or GMO Genetically modified Object.

No, it's not the pesticides, it's gluten itself. Some tolerate it fine, others don't and it's been certainly proven overwhelmingly to be helpful to avoid for many people. Same goes for dairy products, aka casein. Therefore the GFCF diet - which stands for Gluten-Free and Casein-Free.
