    Dark chocolate cookies: recipe

     Preheat the oven to 325 degrees F. Lightly grease (or line with parchment) two baking sheets, three if you have them. Drop the cookie dough by the tablespoonful (about the size of a small ping pong ball) onto the prepared baking sheets. A tablespoon cookie scoop makes this task extremely simple. Leave about 2? between the dough balls, as they’ ll spread as they bake. Bake the cookies for 11 to 12 minutes, until their tops are shiny and cracked. They won’t crack until the very end, so keep a close eye on them; when they’re cracked all the way across the top surface, they’ re done. The point is, you want these baked all the way through, but just barely; additional baking makes them more crisp rather than chewy. Remove the cookies from the oven. Wait 5 minutes then transfer the cookies to a wire rack to cool.

    Crustless Quiche with spinach, mushrooms and walnuts

     Heat the oil in a large skillet over medium heat. Add the mushrooms and cook, stirring until tender, about 5 minutes. Add the garlic and cook for 1 minutes more. Add the spinach and cook, stirring, until any remaining moisture has evaporated, about 2 minutes. Remove from heat. Add a pinch of salt (the cheese is salty, so you won’t need much) and pepper to taste. In a large bowl, whisk the eggs until light. Stir in the half and half. Spoon the spinach mixture evenly into the buttered pie dish. Sprinkle with the cheese and nuts. Pour in the egg mixture. Bake the quiche until puffed and golden brown, about 35 minutes. Serve warm or at room temperature, cut into generous wedges.

     If you don't have brandy, you can use another liquor like Amaretto or just boiling water to soak the cherries. I think a chocolate ganache on top would be yum. Or even just whipped cream.

     You could also used milk chocolate chips (or combination) or tinted white chocolate bark. How sweet would pink be? Size can vary as well. Go really big or very small. Little kids could help make these.

     Lower the flame to medium and add the second tablespoon of olive oil. Toss the carrots, onions, thyme, a few good pinches of salt and a several grinds of black pepper into the pan and cook for 10, stirring occasionally, until the onions are lightly browned. Add the garlic and cook for just one more minute. Add the wine to the pot, scraping any stuck bits off the bottom, then turn the heat all the way up and reduce it by half. Stir in the tomato paste and the broth. Add back the mushrooms with any juices that have collected and once the liquid has boiled, reduce the temperature so it simmers for 20 minutes, or until mushrooms are very tender. Add the pearl onions and simmer for five minutes more. Combine remaining butter and the flour with a fork until combined; stir it into the stew. Lower the heat and simmer for 10 more minutes. If the sauce is too thin, boil it down to reduce to the right consistency. Season to taste.

     They have Oreos with red cream centers out for Christmas. I wonder if those would make the color change. Someone suggested putting a Junior Mint in the middle, but I think using mint Oreos would be better, or maybe peppermint bits?

     Preheat oven to 450°F. Arrange baguette slices on baking sheet and brush with olive oil. Bake until golden and crisp, about 8 minutes. Spread each toast with roasted garlic; top with goat cheese and chutney.
