I used 5 Tbsp. canola oil instead of margarine and it worked well. These were the most amazing cupcakes ever! They disappeared within the first day. So moist and rich andwas able to do it all with only a fork for blending. I made a sort of penutbutter fudge frosting by mixing 1/3 cup natural creamy pb, 1.5cups of powdered sugar, 1.5 tsp of vanilla. THESE WERE DELICIOUS. The flavor was amazing, and they were super moist and had the perfect texture. The only thing I did differently was adding shredded coconut and a little more vanilla than the recipe called for. Sooo soooo good!

POPSSteamed Cake (蒸糕) author says: I find that this is also a versatile recipe; a variety of ingredients can be added as the taste of the cake is mild. In the book, the author prepared two batches of cake using walnuts and red beans, but I used sesame and pine nuts instead. Other variations I can think of are raisins, chocolate bits, prunes, red dates... The possibilities are endless! I did not fill the cake batter up to the rim of the muffin cups, as I thought that it will rise above the rim when cooked. But it did not turn out as expected. So do remember to fill up the cups fully when you try out this recipe.

POPSRaspberry Peach Delight "This light dessert is a snap to make using prepared angel food cake," says Alice Reed of Penfield, New York. "I sometimes layer it in a glass trifle bowl and top it with fresh raspberries for an elegant party dish."

POPSPulut Tekan/Lam Fah Koh Cut into pieces and serve with KAYA(recipe is http://lilyng2000.blogspot.com/2005/05/kaya-rich-egg-custard.html) This is one of the classics of nyonya kuih and how organic can it be when the color blue is obtained from the flower 'Bunga Telang' which gives the special blue to marble the compressed rice. These flowers are hard to come by. Related Link: http://cafeoftheeast.blogspot.com/2007/02/pulut-tai-tai.html

POPSVegan Black Bean Brownies they stayed rather mushy, from what he said, even though I added over 10 minutes to the baking time. I’m sure they’ll be perfect after spending the night in the fridge
