 One of my favorite wild mushrooms. I've been picking and eating this one for 30 years. It's a great mushroom to dry for long storage and rehydrate any time you're in the mood for mushrooms. Great in stews and soups. There's nothing like free food. Usually abundant on grassy areas, such as parks, in Eastern Ontario in the fall after heavy rains.

The present moment will likely be looked back on as another such time. Case in point: Dunkin Donuts just pulled an ad in which TV cook Rachael Ray wore a scarf that somewhat resembled a traditional Palestinian head dress -- because imbalanced bloggers accused the company of promoting terrorism. I'll skip speculating on the sheer pandering nuttiness of Dunkin's decision, to point out merely what a dumb business decision this was. It's a global company. There are 1.3 billion Muslims out there. The math is simple.

 Nutrition: 66cals, 2.3g fat, 1.1g saturated, 13mg cholesterol, 67mg sodium, 10.5g carbs, 5.7g sugar, 0.9g protein Nic: These are delicious. The cookies are not too sweet, with a good coffee flavor. I added a tiny hint of cinnamon to the dough and the overall effect reminded me strongly of a good latte or other basic coffee drink. Texture-wise, they are tender and crisp at the edges immediately after baking, but become chewier after they have cooled. They can be stored for a few days in an airtight container if necessary. Instant coffee is very convenient for flavoring baked goods, but the coffee powder needs to be dissolved in a warm liquid before you incorporate it into the batter. Since I simply stirred them in along with the flour, my cookies have specks. I like the textured look it gives to the cookies. If you want to eliminate them, simply heat the milk and dissolve the crystals before adding them. The cookies will be very similar in flavor, either way.
